This One Pot Cajun Chicken Pasta recipe is a deliciously creamy and spicy pasta dish bursting with Cajun flavors, tender chicken, and easy prep in just one pot. Perfect for a quick dinner!

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cubed
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces penne pasta (or any short pasta)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large, deep skillet or pot over medium heat. Add chicken and season with Cajun seasoning, smoked paprika, salt, and pepper. Cook until chicken is browned and cooked through. Remove and set aside.
  • In the same pot, add onions, garlic, and bell peppers. Sauté until softened, about 3-4 minutes.
  • Pour in chicken broth and heavy cream, then bring to a simmer. Add uncooked pasta, stir well, and cover. Cook for 10-12 minutes, stirring occasionally, until the pasta is tender.
  • Stir the cooked chicken back into the pot, along with mozzarella and Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
  • Adjust seasoning as needed, garnish with parsley, and serve hot.

Notes

  • For extra spice, add a pinch of cayenne pepper.
  • Use any pasta shape you prefer, but short pasta works best for even cooking.
  • If the sauce thickens too much, add a splash of chicken broth or cream.
