  • 8 oz (about 2 cups) pasta of your choice
  • 4 cups vegetable broth (or chicken broth)
  • 1/2 cup heavy cream (or dairy-free alternative)
  • 1 cup shredded mozzarella or Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • In a large pot over medium heat, melt butter or heat oil. Add the sliced onions and sauté until deeply caramelized, about 15–20 minutes. Stir occasionally to prevent sticking.
  • Add garlic, thyme, salt, and pepper. Cook for another 2 minutes until fragrant.
  • Add the pasta and pour in the vegetable broth. Stir well, ensuring the pasta is submerged.
  • Bring to a boil, then reduce the heat to low and cover. Simmer for 10–12 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
