This Orecchiette with Sausage and Spinach recipe combines tender pasta, flavorful sausage, and fresh spinach for a hearty, delicious meal.

  • 12 oz orecchiette pasta
  • 1 lb halal sausage, crumbled
  • 3 cups fresh spinach, chopped
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red chili flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup reserved pasta water

Instructions

  • Bring a large pot of salted water to a boil and cook orecchiette pasta according to package instructions. Reserve 1/4 cup of pasta water and drain the rest.
  • In a large skillet, heat olive oil over medium heat. Add crumbled sausage and cook until browned and fully cooked, about 5-7 minutes.
  • Stir in minced garlic and chili flakes (if using), cooking for 1 minute until fragrant.
  • Add the chopped spinach to the skillet and sauté until wilted, about 2-3 minutes.
  • Toss the cooked pasta into the skillet with the sausage and spinach mixture. Mix well.
  • Stir in reserved pasta water to create a light sauce. Add Parmesan cheese and season with salt and pepper to taste.
  • Serve immediately, garnished with additional Parmesan if desired.

Notes

  • You can substitute spinach with kale or arugula for variety.
  • For a creamier version, add a splash of heavy cream or a dollop of ricotta cheese before serving.
