12 oz orecchiette pasta
1 lb halal sausage, crumbled
3 cups fresh spinach, chopped
2 tbsp olive oil
3 cloves garlic, minced
1/2 tsp red chili flakes (optional)
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 cup reserved pasta water
Instructions
Bring a large pot of salted water to a boil and cook orecchiette pasta according to package instructions. Reserve 1/4 cup of pasta water and drain the rest.
In a large skillet, heat olive oil over medium heat. Add crumbled sausage and cook until browned and fully cooked, about 5-7 minutes.
Stir in minced garlic and chili flakes (if using), cooking for 1 minute until fragrant.
Add the chopped spinach to the skillet and sauté until wilted, about 2-3 minutes.
Toss the cooked pasta into the skillet with the sausage and spinach mixture. Mix well.
Stir in reserved pasta water to create a light sauce. Add Parmesan cheese and season with salt and pepper to taste.
Serve immediately, garnished with additional Parmesan if desired.
Notes
You can substitute spinach with kale or arugula for variety.
For a creamier version, add a splash of heavy cream or a dollop of ricotta cheese before serving.
