  • 1/2 cup unsalted butter, softened

  • 1/2 cup creamy peanut butter

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 350°F (175°C) and grease a mini muffin tin.

  • In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until smooth.

  • Add egg and vanilla extract, beat until combined.

  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients.

  • Fold in chocolate chips.

  • Roll dough into 1-inch balls and place each in the muffin tin.

  • Bake for 10–12 minutes or until edges are golden brown.

 

  • Let cool in the pan for 5 minutes before removing.

Notes

  • Use mini muffin tins for perfect cookie cup shape.

  • For a richer taste, try dark chocolate chips.

  • Dough can be made ahead and frozen.
