  • 1.5 lbs beef sirloin or flank steak, sliced into thin strips
  • 2 bell peppers (red, green, or yellow), sliced
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup beef broth
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp ground black pepper
  • 1/2 tsp crushed red pepper flakes (optional)

Instructions

  1. Place the sliced beef, bell peppers, onion, and garlic in the crock pot.
  2. In a bowl, mix soy sauce, beef broth, tomato paste, brown sugar, and black pepper. Pour over the beef and vegetables.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours until beef is tender.
  4. In the last 30 minutes, mix cornstarch and water to form a slurry. Stir it into the crock pot to thicken the sauce.
