  • 4 medium potatoes, peeled and cubed

  • 1 large cucumber, thinly sliced

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 2 tbsp fresh dill, chopped

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

  • Optional: 1/4 cup thinly sliced red onions

Instructions

  • Boil the cubed potatoes in salted water until tender, about 10-12 minutes. Drain and cool.

  • In a bowl, whisk together sour cream, mayonnaise, lemon juice, Dijon mustard, and dill. Season with salt and pepper.

  • In a large bowl, combine cooled potatoes, cucumber slices, and red onions if using.

  • Pour dressing over the salad and toss gently to coat.

 

  • Chill in the fridge for at least 30 minutes before serving.

Notes

  • For extra crunch, add radishes or celery.

  • Use Greek yogurt instead of sour cream for a lighter version.
