4 medium potatoes, peeled and cubed
1 large cucumber, thinly sliced
1/2 cup sour cream
1/4 cup mayonnaise
2 tbsp fresh dill, chopped
1 tbsp lemon juice
1 tsp Dijon mustard
Salt and pepper to taste
Optional: 1/4 cup thinly sliced red onions
Boil the cubed potatoes in salted water until tender, about 10-12 minutes. Drain and cool.
In a bowl, whisk together sour cream, mayonnaise, lemon juice, Dijon mustard, and dill. Season with salt and pepper.
