1 cup pumpkin puree
1 cup sugar
1/2 cup brown sugar
1/2 cup unsalted butter, softened
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 cup chocolate chips
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, cream together the butter, sugar, and brown sugar until light and fluffy.
Add the egg, vanilla extract, and pumpkin puree, mixing until combined.
In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
Bake for 10-12 minutes, or until the edges are lightly golden.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For extra flavor, add a pinch of ground cloves or ginger.
You can use dark, semi-sweet, or milk chocolate chips depending on your preference.
If you prefer chewier cookies, underbake them slightly.
