  • 2 cups milk, warmed
  • 4 eggs, separated
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 1/8 tsp cloves
  • Powdered sugar, for dusting

Instructions

 

  1. Preheat the oven to 325°F (165°C). Grease a 9x9-inch baking dish.
  2. Separate the eggs, beating the egg whites until stiff peaks form.
  3. In another bowl, beat the egg yolks and sugar until light and fluffy. Add melted butter, vanilla extract, and pumpkin puree, and mix well.
  4. Gradually add the flour and spices, then slowly mix in the warmed milk.
  5. Gently fold in the egg whites, ensuring not to overmix. The batter will be thin and lumpy.
  6. Pour the batter into the prepared baking dish and bake for 50-60 minutes, or until the top is lightly golden.
  7. Allow the cake to cool completely before dusting with powdered sugar and serving.
