Ingredients

Scale
  • 1 lb ground beef
  • 1 can kidney beans (15 oz), drained and rinsed
  • 1 can diced tomatoes (15 oz)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup beef broth
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  • Heat a large pot over medium heat. Add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  • Add diced onion and garlic to the pot, cooking until softened, about 2-3 minutes.
  • Stir in chili powder, cumin, paprika, salt, and pepper. Cook for 1 minute to toast the spices.
  • Add diced tomatoes, kidney beans, and beef broth. Stir to combine.
  • Bring to a simmer, then reduce heat and cook for 15-20 minutes, stirring occasionally.
  • Taste and adjust seasoning if needed. Serve with optional toppings.

Notes

  • You can substitute ground turkey or chicken for the ground beef for a lighter version.
  • Adjust the amount of chili powder for more or less heat.
  • For extra richness, add a tablespoon of tomato paste while browning the beef.
