  • 1 lb. halal beef or chicken sausage, crumbled
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 4 cups chicken or vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 2 cups baby spinach leaves
  • 9 oz cheese tortellini
  • 1 cup heavy cream
  • Freshly grated Parmesan, for serving (optional)
  • Fresh chopped parsley, for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned, about 5-7 minutes. Remove and set aside.
  • In the same pot, add diced onion, garlic, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
  • Stir in Italian seasoning, salt, and black pepper. Add chicken or vegetable broth and diced tomatoes. Bring to a boil.
  • Reduce heat to a simmer, then add cooked sausage back into the pot. Cook for 10 minutes to allow flavors to blend.
  • Add tortellini and cook for 5-7 minutes or until pasta is tender. Stir in baby spinach until wilted.
  • Reduce heat to low and add heavy cream, stirring until well combined.
  • Serve hot, garnished with freshly grated Parmesan and chopped parsley if desired.

Notes

  • For a lighter soup, substitute heavy cream with half-and-half or coconut milk.
  • To make the soup even more filling, add white beans or extra veggies like zucchini.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
