  • Ground beef
  • Carrots

  • Beef broth
  • Potatoes

  • Worcestershire sauce
  • Thyme
  • Bay leaf
  • Salt
  • Pepper
  • Butter
  • Flour
  • Milk

Instructions

  • Brown the ground beef in a large pot, then remove and set aside.
  • In the same pot, sauté diced onions, carrots, and celery until softened.
  • Add minced garlic and cook until fragrant.
  • Stir in tomato paste and cook briefly, then sprinkle flour over the veggies and stir to coat.
  • Gradually pour in beef broth while stirring, then add diced potatoes, Worcestershire sauce, thyme, and bay leaf.
  • Bring the mixture to a boil, reduce heat, and simmer until potatoes are tender.
  • Return the browned beef to the pot, then stir in peas, corn, and milk.
  • Simmer for a few more minutes until heated through and thickened.
  • Season with salt and pepper to taste, and remove the bay leaf before serving.

Notes

  • For a thicker soup, mash some of the potatoes before adding the beef back in.
  • You can substitute ground lamb for a more traditional shepherd’s pie flavor.
