Slow Cooker Chicken and Rice Recipe is a delicious, easy-to-make dish that combines tender chicken, fluffy rice, and savory seasonings, all cooked to perfection in a slow cooker.

  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas and carrots mix
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions

  • Grease the inside of your slow cooker with olive oil.
  • Add chicken breasts to the slow cooker and season with salt, pepper, and paprika.
  • In a separate bowl, mix the chicken broth, cream of chicken soup, onion, garlic, and rice. Pour over the chicken.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Add the frozen peas and carrots 30 minutes before the end of the cooking time. Stir gently.
  • Once cooked, fluff the rice with a fork and serve warm.

Notes

  • Substitute white rice with brown rice for a healthier option, but adjust cooking time as needed.
  • Add shredded cheese on top for extra flavor before serving.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
