  • 2 lbs boneless, skinless chicken breasts
  • 1 cup queso cheese dip
  • 1 (10 oz) can diced tomatoes with green chilies (Rotel)
  • 1 packet taco seasoning
  • 1/2 cup chicken broth
  • 10-12 taco-sized tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, chopped cilantro, sour cream, shredded cheese

Instructions

 

  1. Place chicken breasts in the slow cooker.
  2. Sprinkle taco seasoning over the chicken.
  3. Add diced tomatoes with green chilies and chicken broth.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
  5. Shred the chicken with two forks and stir in the queso dip.
  6. Allow to cook for an additional 10-15 minutes until everything is combined and heated through.
  7. Serve the chicken mixture in tortillas and top with your favorite taco toppings.

  • You can substitute queso dip with your favorite cheese sauce.
