  • 2 cups shredded cooked chicken
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup red enchilada sauce
  • 4 large flour tortillas
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, diced tomatoes, avocado

Instructions

 

  1. Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  2. In a bowl, mix chicken, rice, black beans, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Spoon the mixture into the center of each tortilla. Add a sprinkle of cheddar cheese and Monterey Jack cheese.
  4. Roll the tortillas tightly and place seam-side down in the baking dish.
  5. Pour enchilada sauce evenly over the burritos, then sprinkle the remaining cheese on top.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
  7. Serve hot with your favorite toppings.

  • Use rotisserie chicken for a quicker prep.
  • Add jalapeños or hot sauce for extra spice.
  • Substitute pinto beans or refried beans if desired.
