  • 2 cans white beans (cannellini or great northern), drained and rinsed
  • 1 can diced green chilies
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  • In a large pot, sauté the diced onion and garlic over medium heat until soft.
  • Add the chicken breasts and cook until browned on all sides.
  • Stir in the green chilies, cumin, chili powder, oregano, and cayenne pepper.
  • Pour in the chicken broth and bring the mixture to a simmer.
  • Add the white beans and continue to simmer for 20-25 minutes, until the chicken is cooked through.
  • Remove the chicken from the pot, shred it with two forks, and return it to the pot.
  • Stir in the sour cream, lime juice, and cilantro.
  • Season with salt and pepper to taste, then simmer for an additional 5 minutes.
