  • 300g penne or pasta of choice
  • 250g spicy Italian sausage (halal)
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 400g canned crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp red chili flakes (adjust to taste)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper, to taste
  • 1/3 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook, breaking it into smaller pieces, until browned and fully cooked.
  • Add the onion, garlic, and bell pepper to the skillet. Sauté until softened, about 3-4 minutes.
  • Stir in the crushed tomatoes, tomato paste, chili flakes, oregano, basil, salt, and black pepper. Simmer for 8-10 minutes to allow flavors to meld.
  • Reduce the heat and stir in the heavy cream. Add the cooked pasta to the skillet, tossing to coat evenly. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  • Top with Parmesan cheese (if using) and garnish with fresh parsley before serving.

Notes

  • Adjust the spice level by increasing or decreasing the chili flakes.
  • For a lighter option, substitute heavy cream with Greek yogurt.
  • Use gluten-free pasta if needed.
