Ingredients

  • 6 cups spring mix greens

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup walnuts or pecans, toasted

  • 1/4 cup crumbled feta cheese (optional)

For the Balsamic Honey Dressing:

  • 1/4 cup balsamic vinegar

  • 2 tablespoons honey

  • 1 teaspoon Dijon mustard

  • 1/3 cup extra virgin olive oil

  • Salt and pepper, to taste

Instructions

  2. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, olive oil, salt, and pepper until well combined.
