  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Slice each chicken breast lengthwise to create a pocket, ensuring not to cut all the way through.
  • In a bowl, mix spinach, cream cheese, mozzarella, sun-dried tomatoes, garlic, and Italian seasoning. Season with salt and pepper.
  • Stuff each chicken breast with the mixture and secure with toothpicks.
  • Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden brown.
  • Transfer to a baking dish and bake for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).
  • Remove from oven, let rest for 5 minutes, and serve warm.
