  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ cup diced tomatoes
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • ½ cup shredded lettuce
  • ¼ cup sliced jalapeños (optional)

Instructions

  • Preheat oven to 400°F (200°C). Scrub and dry potatoes, then pierce with a fork.
  • Bake potatoes for 50-60 minutes until tender.
  • In a skillet, cook ground beef over medium heat until browned. Drain excess grease.
  • Add taco seasoning and water, simmer for 5 minutes.
  • Slice potatoes open and fluff the insides with a fork.
  • Top each potato with seasoned beef, cheese, sour cream, tomatoes, lettuce, green onions, cilantro, and jalapeños.
