4 cod fillets
1 can (13.5 oz) coconut milk
1 lemon (zested and juiced)
3 cloves garlic (minced)
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley for garnish
Preheat oven to 375°F (190°C).
In a skillet, sauté garlic in olive oil for 1–2 minutes.
Stir in coconut milk, lemon juice, and zest. Simmer for 5 minutes.
