  • 1 red chili (optional), finely chopped

  • 1 cup full-fat coconut milk

  • 1 tbsp red Thai curry paste

  • 1 tbsp fish sauce

  • 1 tsp brown sugar

  • Juice of ½ lime

  • Fresh cilantro, for garnish

  • Cooked jasmine rice, for serving

Instructions

  1. Heat oil in a skillet over medium heat. Add garlic, ginger, and red chili; sauté for 1-2 minutes until fragrant.

  2. Stir in curry paste and cook for another minute.

  3. Pour in coconut milk, fish sauce, and brown sugar. Simmer for 5-7 minutes.

  4. Add shrimp and cook for 4-5 minutes, or until pink and cooked through.

  5. Finish with a squeeze of lime juice and garnish with cilantro.

  6. Serve hot over jasmine rice.
