1 lb large shrimp, peeled and deveined
1 tbsp vegetable oil
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 red chili (optional), finely chopped
1 cup full-fat coconut milk
1 tbsp red Thai curry paste
1 tbsp fish sauce
1 tsp brown sugar
Juice of ½ lime
Fresh cilantro, for garnish
Cooked jasmine rice, for serving
Heat oil in a skillet over medium heat. Add garlic, ginger, and red chili; sauté for 1-2 minutes until fragrant.
