1 lb Italian sausage (mild or spicy)
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 can (14 oz) diced tomatoes
1 cup heavy cream
3 cups cheese tortellini (fresh or frozen)
2 cups fresh spinach (or kale)
1 tsp Italian seasoning
Salt and pepper, to taste
Instructions
In a large pot, brown the sausage over medium heat, breaking it into small pieces.
Add the diced onion and garlic, sauté until softened.
Pour in the chicken broth and diced tomatoes, stir to combine.
Bring to a boil, then reduce heat to a simmer. Stir in the Italian seasoning.
Add the tortellini and cook according to package instructions, about 5–7 minutes.
Stir in the heavy cream and spinach, letting it wilt. Season with salt and pepper to taste.
