4 slices Italian bread or ciabatta
2 tbsp olive oil
4 slices turkey salami or beef pepperoni
4 slices halal smoked turkey or chicken
2 slices provolone or mozzarella cheese
1/2 cup fresh arugula or spinach leaves
1/2 medium tomato, sliced
1/4 small red onion, thinly sliced
2 tbsp mayonnaise (optional)
1 tsp Italian seasoning
1/4 tsp crushed red pepper flakes (optional)
Instructions
Preheat a skillet or sandwich press over medium heat.
Brush one side of each bread slice with olive oil.
Layer turkey salami, smoked turkey, cheese, arugula, tomato slices, and onion on the un-oiled side of two bread slices. Sprinkle with Italian seasoning and red pepper flakes if desired.
Spread mayonnaise on the inside of the remaining bread slices (optional). Place on top to form sandwiches.
Grill the sandwiches in the skillet or press until the bread is golden brown and the cheese is melted, about 3–4 minutes per side.
Remove from heat, slice in half, and serve warm.
Notes
Use a non-stick pan for easy grilling.
For a spicier flavor, add a few jalapeño slices.
Serve with a side of marinara sauce or a light salad for a complete meal.
