Ingredients

  • 3 pounds Yukon Gold potatoes, peeled and cut into chunks

  • 1 cup mayonnaise

  • 2 tablespoons yellow mustard

  • 1 tablespoon apple cider vinegar

  • 1/2 cup chopped celery

  • 1/3 cup chopped red onion

  • 3 hard-boiled eggs, chopped

  • Salt and pepper to taste

  • 1/4 cup chopped fresh parsley (optional)

  • Paprika for garnish (optional)

Instructions

  • Boil potatoes in salted water until fork-tender, about 10-12 minutes. Drain and let cool.

  • In a large bowl, mix mayo, mustard, and vinegar.

  • Add celery, red onion, eggs, and cooled potatoes. Toss gently to combine.

  • Season with salt and pepper to taste.

  • Chill for at least 1 hour.

 

  • Garnish with parsley and paprika before serving.

Notes

For extra flavor, try adding a dash of pickle juice or chopped pickles. Best served chilled.
