Instructions

  • Preheat oven to 350ยฐF (175ยฐC) and line a cupcake pan with 12 liners.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Mix in the strawberry puree.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Fold in the chopped white chocolate.
  • Divide the batter evenly among cupcake liners and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.
  • For the frosting, beat butter until creamy. Gradually add melted white chocolate, powdered sugar, and vanilla extract. Add heavy cream if needed to achieve the desired consistency.
  • Frost the cooled cupcakes and garnish with fresh strawberry slices or white chocolate shavings, if desired.
